This grape and primosale salad embodies the flavors and warm tones of Summer.
It is an easy and seasonal salad that tastefully mixes the sweetness of grapes and the intense flavor of taggiasche olives and raw prosciutto crudo ham. All refreshed by the slightly bitter presence of a white-wine vinegar emulsion.
This recipe is perfect if you want a single dish for a quick lunch or if you want to present a delicious appetizer.
Also, if you wish to turn it into into a vegetarian recipe, you can replace the ham with chopped walnut kernels.

200 g primosale cheese
200 g iceberg salad
16 pitted Taggiasche olives
16 grapes
4 slices prosciutto crudo ham
white wine vinegar
EVO oil
- Pour 3 tablespoons of EVO oil in a small bowl and add 1 teaspoon of wine vinegar. Add salt and whisk until you obtain an emulsion
- Wash grapes and cut them in half, removing the seeds whether necessary. Dice primosale cheese (cubes with 2 cm side)
- Pour 2 tablespoons of EVO oil in a pan and place it over medium heat. When the oil is hot, add the prosciutto crudo ham, chopped
- Once they have become golden, let it drain on paper towel
- Arrange the salad in a large bowl: place the iceberg salad on the bottom first. Add olives, grapes, primosale cheese and crispy prosciutto crudo stripes. Season it with the emulsion of EVO oil, and bring to the table!
