Spicy stuffed avocados

10 minutes to prepare 5 minutes to cook Serves 4



Today's recipe, which is as delicious as it is easy to prepare, is ready in just 10 minutes!

These spicy avocados are made from four main ingredients: avocado pulp, capers, olives and anchovies.
Just assemble and season them to obtain the filling with which to stuff the avocado shells or, alternatively, to be placed on slices of crispy bread.

The result is a delicious idea to be served as finger food for an aperitiv, or as an original appetizer.

Here's what you will need for the 4-serving recipe:

2 ripe avocados
100 g frozen edamame
6 pitted Taggiasche olives
4 anchovies preserved in olive oil
1 lemon
6 capers packed in salt, rinsed for 30 minutes
salt and pepper
EVO oil

      1. Boil edamame in salted water for 5 minutes. Drain them and keep aside
      2. Slice the avocados in half, remove the pit, use a spoon to scoop out all the avocado pulp to create a crater. Place the pulp in a large bowl and the avocado shells in the fridge
      3. Cut the avocado pulp in small cubes and place them in a large bowl
      4. Add capers, edamame, anchovy fillets and olives - all cut into small pieces -, the lemon juice, salt and pepper. Stir very well
      5. Take the avocado shells from the fridge and load them up with the avocado mixture. Enjoy!!!
