Orecchiette fresh pasta with zucchini flowers, mussels and saffron

Today we present you an amazing first course dish: saffron-flavoured mussels and zucchini flowers fresh pasta, a spicy and very special combination. This sauce is rich in taste, and - at the same time - a perfect dish to be prepared if you are in a hurry.
The recipe is easy and also available in a lighter version for those who want to limit the calorie count: it is enough to reduce the amount of EVO oil and pasta.

According to the tradition, mussels are better during the months without the " R ", from May to August, as molluscs are less tasty during the breeding season...of course now it is late to be too pedantic, some compromise is needed. I thus used frozen ones, I will try to remember this recipe as soon as "R" disappears again!


Here's what you will need for the 4-serving recipe:


400 g Orecchiette fresh pasta
500 g frozen mussels, already cleaned
1 clove garlic
10 zucchini flowers
1 sachet saffron powder
100 ml white wine
1 sprig parsley
salt
EVO oil


      1. To prepare the orecchiette pasta with zucchini flowers and mussels, start by cooking mussels: put them in a large pan with 3 tablespoons of EVO oil, garlic, chopped parsley and white wine. Let them to braise over medium heat, then take them off and cover with a lid. Be careful not to make the water produced while cooking to reduce too much: it will become the basis for our sauce!
      2. Boil water in a pot, add salt and once started to bubble, pour the orecchiette fresh pasta. Follow the time instructions reported on the package: usually fresh pasta is ready in about 5 minutes
      3. Meanwhile, add to the pan with mussels the saffron and cook over medium heat. When the water evaporates, add the zucchini flowers - washed and chopped-
      4. Drain the pasta, add it to the mussels sauce and stir over high heat for a few minutes to flavor the orecchiette; if pasta looks dry, add some cooking water. Then, turn off the heat and add chopped parsley
      Your orecchiette are ready to make you happy!
