Watermelon and cucumber salad with feta cheese

A watermelon, feta and mint salad, with cucumber.

This salad is a fresh, and delicious dish to serve all summer long!
The sweetness of the watermelon, with the saltiness of the feta cheese, and crunch of the cucumber all make this the perfect balance of flavor. And with all the different shapes, colors and textures of the ingredients, who said that salads had to be boring? 

This healthy salad is perfect for a light lunch: with zero cook time, it is the easiest way to add color and hydration to your plate.

ere are ingredients for
the 4-serving recipe:

 


400 g watermelon
cucumbers
200 g feta cheese  
10 leaves mint
EVO oil
salt


  1. Wash the cucumbers under running water. Trim off the bottom, and peel them. Remove the inner part (with seeds) and cut them into slices . Place them in a large bowl
  2. Cut watermelon into small cubes
  3. Cut feta cheese into small pieces, too. Add both watermelon and the cheese to the salad bowl
  4. Wash and cut mint leaves into pieces, and add them to the salad bowl, too
  5. Season the salad with EVO oil and salt and stir to mix. Serve immediately!
