Tarte Tatin with tomatoes

15 minutes to prepare •  30 minutes to cook •  Serves 12

When an idea is as good as tarte tatin, it would be a pity to confine it to apricots, because buttery caramel and crisp pastry are a happy pairing with everything from homely fruits to exotic more savory fruits such as the tomato or pepper. 

Indeed, a tomato tatin, a staple of French brasserie menus, is an excellent way to make the most of the slightly disappointing specimens it’s all too easy to come across, although it also works with fruit that’s too ripe or too bruised to serve raw.

Clearly, because tomatoes are rather different to apricots, and because this isn’t a dessert, it’s not sufficient simply to substitute one for the other in the original recipe. 
So how do you make the perfect tomato tatin?

Here's what you will need for the 12-serving recipe:


230 g pack of puff pastry
180 g cream cheese
100 g ricotta cheese
300 g cherry tomatoes
30 g butter
20 g sugar
1 sprig basil
EVO oil
salt and pepper


  1. Preheat oven to 200°C
  2. Wash cherry tomatoes and cut them by half. Place them in a bowl together with salt and pepper, and chopped basil. Mix well
  3. After 5 minutes, transfer them in a colander and let them drain for 5 minutes
  4. In another bowl, mix ricotta cheese with cream cheese. Add some salt and keep aside
  5. Cover the baking pan with parchment paper, then distribute butter flakes and sugar on the bottom
  6. Place tomatoes on th bottom, with the seeds' side on top and cover all the bottom
  7. Roll the puff pastry and distribute the cheese mix on top
  8. Then, place the puff pastry on the tomatoes, with the side covered by cheese on the bottom, and being sure to make the pastry cover also the borders of the tray
  9. Place the tarte tatin on the lowest oven shelf and bake at 200°C (static oven) for 30 minutes, until the top is golden brown. Leave to cool to room temperature for 1 hour before inverting it onto a large serving plate. Enjoy!
