Sicilian stuffed artichokes

It’s funny the foods that permeate your childhood and discovering them again as an adult.

Stuffed artichokes were the occasional weeknight treat, a favorite of my father, and something I ask my mother to prepare for me now, from time to time.
Stuffed artichokes are one of those things that felt like they belonged firmly with my mom and my grandma - I always found artichokes kind of fussy and hard to eat for such little reward.
But you can’t deny how unique and beautiful they are and that they’re actually fun to eat and share around an intimate table.

This is a traditional Sicilian recipe and a classic in a family, which I hope you will enjoy!


Here's what you will need for the 4-serving recipe:

medium-sized artichokes
200 g breadcrumbs
100 g grated pecorino cheese
100 g grated parmesan cheese
3 cloves halved garlic
fresh parsley
EVO oil
salt and Pepper

  1. Clean the artichokes by pulling the harder, outer leaves off. You can also cut the stem and the top part of the leaves
  2. Put the artichokes in a bowl full of water and lemon juice to soak for 30 minutes. Then, give them a quick rinse
  3. Place a sauté pan over medium-low heat and warm 2 tablespoons of olive oil. Add bread crumbs and stir, sautéing until the crumbs are likely golden. Remove and let cool in a bowl
  4. To the bread crumbs, add finely chopped parsley, garlic, salt and pepper, grated cheese and a drizzle of olive oil. Stir until combined
  5. Take the artichokes and pull the leaves back a bit, opening them as wide as you can and insert the bread crumb mixture and parmesan shavings. Drizzle artichokes with olive oil
  6. Place the stuffed artichoke in a large pot on the stove top. Repeat until all artichokes are stuffed and ready to steam
  7. Drizzle olive oil on top of the breadcrumbs to coat. Cover the bottom inch of the pan with water
  8. Cover the pan and bring to a boil, then lower to simmer. Cook for 45 minutes, checking the water level every 15 minutes
  9. With a large slotted spoon, carefully remove each Stuffed Artichoke and transfer to serving platter. Serve with a side bowl for discarded leaves.
