Many people say that breakfast is the most important meal of the day.
I present to you a very delicious way to start your day: puff-pastry candies with eggs, speck ham and cheese.
Tasty speck ham, a delicious egg, and creamy, old cheese all contained within a flaky pastry case.
This is an ideal breakfast or appetizer, and best of all, it is really simple to make!
A long ago, I had the chance to share a similar recipe on the blog, my smoked salmon and ricotta cheese pastries. It is a recipe that I have been making since my early cooking days, and has been a family favorite ever since.
Since I hit publish on that post, I have been keen to share some other variations of these pastries – a delicious, rustic appetizer, that looks impressive but is so simple to make. I hope you enjoy it!

250 g pack of puff pastry
4 eggs
100 g Speck ham
100 g Stelvio cheese
1 egg yolk
- Preheat oven to 220°C
- Boil salted water. The, add the eggs and cook them for 8 minutes. Finally, peel them and halve them. Keep aside
- Slice Stelvio cheese. Keep aside
- Cut out puff pastry rectangles and place them on a baking paper covered baking sheet
- Place 1 slice of Stelvio cheese on the bottom, then half boiled egg wrapped in the Speck ham on top. Wrap the puff pastry rectangle around
- Using two fingers, lightly press the ends of the pastries, to make the candy shape. Then brush the tops with a bit of whisked egg yolk
- Place pastries on the lowest oven shelf and bake at 220°C (fan oven) for 25 minutes, until they’ve risen and the tops are golden brown. Leave to cool for a couple of minutes...and serve while still warm!
