Puff-pastry candies with boiled eggs, speck ham and Stelvio cheese

Many people say that breakfast is the most important meal of the day.
I present to you a very delicious way to start your day: puff-pastry candies with eggs, speck ham and cheese.
 
Tasty speck ham, a delicious egg, and creamy, old cheese all contained within a flaky pastry case.
This is an ideal breakfast or appetizer, and best of all, it is really simple to make!
 
A long ago, I had the chance to share a similar recipe on the blog, my smoked salmon and ricotta cheese pastries. It is a recipe that I have been making since my early cooking days, and has been a family favorite ever since.
Since I hit publish on that post, I have been keen to share some other variations of these pastries – a delicious, rustic appetizer, that looks impressive but is so simple to make. I hope you enjoy it!



Here's what you will need for the 4-serving recipe:



250 g pack of puff pastry
4 eggs
100 g Speck ham
100 g Stelvio cheese
1 egg yolk


  1. Preheat oven to 220°C
  2. Boil salted water. The, add the eggs and cook them for 8 minutes. Finally, peel them and halve them. Keep aside
  3. Slice Stelvio cheese. Keep aside
  4. Cut out puff pastry rectangles and place them on a baking paper covered baking sheet
  5. Place 1 slice of Stelvio cheese on the bottom, then half boiled egg wrapped in the Speck ham on top. Wrap the puff pastry rectangle around
  6. Using two fingers, lightly press the ends of the pastries, to make the candy shape. Then brush the tops with a bit of whisked egg yolk
  7. Place pastries on the lowest oven shelf and bake at 220°C (fan oven) for 25 minutes, until they’ve risen and the tops are golden brown. Leave to cool for a couple of minutes...and serve while still warm!
