Strascinati fresh pasta with pistachios pesto, toasted almonds and shrimps

Pistachios pesto is a fresh pasta sauce characterised by aromatic flavor that enhances the unique taste of these dry fruits.
The secret to get a delicious pesto is certainly to use top-quality pistachios. Prepation is simple, then: just blend pistachios with basil, Parmesan cheese and lemon zest.
Pistachios pesto is the perfect seasoning for pasta but you may also enjoy it on crispy toasted bread to be served as a tempting appetizer.

Today we will use along with shrimps, toasted almonds and fresh Strascinati pasta to make a delicious first course recipe, as suggested by Un pinguino in cucina.
We will be ready in 10 minutes, just follow the instructions below and...buon appetito!


Here's what you will need for the 4-serving recipe:


400 g Strascinati fresh pasta
20 g grated Parmesan cheese
1/2 lemon zest
100 g shelled pistachios
30 g sliced almonds
250 g shrimps
3 basil leaves
salt and pepper
EVO oil


      1. Boil water in a pot, add salt and once started to bubble, pick up a ladle of water and keep aside
      2. In a pan pour 1 tablespoon of EVO oil, add shrimps with a pinch of salt and pan-fry for a couple of minutes
      3. Place pistachios in a blender. Add 4 tablespoons of EVO oil, the Parmesan cheese, the lemon zest, basil leaves, a pinch of salt and blend to obtain a granular pistachios pesto
      4. Toast sliced almonds in a hot pan and keep them aside
      5. Boil Strascinati fresh pasta in salted water. Follow the time instructions reported on the package: usually fresh pasta is ready in about 5 minutes
      6. Meanwhile, combine the pistachios pesto with shrimps in the pan. Add the hot water (kept aside from the pasta) and cook over medium heat until it thickens a bit
      7. Drain pasta al dente and stir it for a few moments with pistachios pesto and shrimps. Serve hot with some toasted almonds and freshly ground pepper on top
