Strozzapreti fresh pasta with zucchini flowers, sausage and Pecorino cheese

Pasta with sausage and zucchini flowers is a delicious and easy first course.
It is a recipe suited for the summer period, not only for the presence of zucchini flowers, which are typical of this period, but also for its warm and sunny look.

The sauce of sausage and zucchini flowers may go with the pasta you prefer, wheat flour or fresh pasta, like in this case. Anyway, it is preferable to choose a "wraparound" pasta format, which is capable of embracing the dressing.
Ideal choices are fusilli, cavatelli, but also caserecce or orecchiette.

The preparation of pasta with sausage and zucchini flowers is very simple, you just have to braise the crumbled sausage and add the zucchini flowers at the very end, to keep them firm as much as possible.


Here are ingredients for the 4-serving recipe:

 


400 g pasta
300 g sausage
20 zucchini flowers
60 g grated Pecorino cheese
salt and pepper

  1. Cut the skin of the sausage with the tip of a sharp knife and remove it. Cut the sausage into nibbles of equal size
  2. Place the pieces of sausage in a pan preheated over medium heat. Do not add any oil so that it fries in its own fat 
  3. Once it has become golden, wash, clean, chop zucchini flowers and add them directly into the pan and cook for a few minutes until they become soft and well mixed with the sausage fat 
  4. Meanwhile, cook the fresh pasta in boiling salted water
  5. Drain Strozzapreti pasta al dente keeping aside some cooking water. Add pasta to the sauce and season it with salt and pepper according to your taste
  6. Add grated Pecorino and pan-fry the pasta over medium heat for 2 minutes, pouring some cooking water not to dry too much the sauce. Serve immediately!
