With this easy recipe you will bring a tasty, nutritious and original side dish to the table. Baked sweet potatoes with walnuts is an orange-scented dish that plays with the soft and crunchy textures of the ingredients.
The sweet potato, also known as American potato or batata, is a tuber originating from the South American continent, tasty and very precious for our body.
It is a real source of beneficial components, rich in fibre, vitamins A and C and mineral salts. It can be eaten both raw and cooked, with or without the peel. Its slightly sweet flavor is halfway between that of pumpkin and that of the common potato and its consistency is also halfway between these two vegetables. The color of the pulp, however, changes depending on the variety, going from white to orange to purple. In short, it is a tuber, really interesting!
Here are ingredients for a 4-serving recipe:
1 tablespoon honey
1 orange fruit
1 fistful walnuts
butter
salt and pepper
- Heat the oven to 180°C
- Wash and brush well the unpeeled potatoes
- Cook the potatoes in hot water, for 20 minutes after boiling
- When they are ready, drain them from the water and let them cool. Peel them and cut them into slices about 1 cm thick
- Squeeze the orange and filter the juice into a bowl. Mix it with honey, freshly ground black pepper and a pinch of salt
- Arrange the sweet potato slices on the bottom of a previously buttered baking dish with high edges. Season them with orange juice, some walnuts, flakes of butter and a little salt. Repeat the process until you run out of potato slices, you should get 2-3 layers
- Bake in a preheated oven at 180° for about 40 minutes. Remove and serve warm
