Cod stuffed salmon roll

Salmon & Cod 

 


This is an excellent dish to reintroduce anyone to fish.
A lot of people tend to avoid buying fish as it can be expensive, the bones off putting and alien to cook. Also, cod and salmon recipes are usually avoided as they seem difficult to cook. Well, this recipe is going to change your mind.

Cod is a fab fish as it really absorbs the flavors easily, is super healthy and lean. Plus salmon is so good for you. Enjoy!

ere are ingredients for
the 4-serving recipe:

 


300 g cod fillet
100 g fresh salmon slices (I used the ones for carpaccio)
5 basil leaves
EVO oil
salt/pepper

  1. Lay the salmon out on some tin foil then place the cod on top. Season with salt and pepper and roll up
  2. Place some basil leaves and top, and tie the roll up with some kitchen twine
  3. Heat 1 tablespoon of oil in a pan
  4. Meanwhile, preheat oven to 180°C
  5. Place the roll in the pan and sauté it on medium heat, on all the sides
  6. Top a pastry board with a piece of baking paper and lay down the browned salmon roll. Cover the roll with paper, then roll some alluminium foil on top
  7. Bake the fish at 180° for 25 minutes
  8. When you are ready to eat, take the roll out of paper, unwrap it and cut it into slices. Finally, arrange them on serving plates and enjoy!
