I love all things rice-y.
And this super easy blue cheese rice salad with gorgonzola cheese and smoked salmon is a great example of how delicious and quick it is.
I like to eat it for lunch but it can definitely serve as a dinner appetizer as well. Since there is not that much vegetables inside I would include a large bowl of tomatoes as side dish, when serving this. Also don't forget to add fava beans or edamame for extra flavour!

300 g purple rice
100 g Gorgonzola cheese
100 g smoked salmon
100 g fava beans (I used frozen ones)
EVO oil
basil leaves salt and pepper
- Cut Gorgonzola cheese into cubes
- Boil water in a pot, add salt
- Once the water starts to bubble, pour the rice and cook it for 20 minutes
- Boil water in another pot. Once the water starts to bubble, pour the fava beans and cook them for 5 minutes
- Drain beans, and peel them. Keep aside
- Cut smoked salmon into stripes
- Blend basil leaves with few tablespoons of EVO oil and salt, for seasoning
- Place one ladle of purple rice on each plate. Top with fava beans, smoked salmon, Gorgonzola, and some basil-flavored oil. Serve immediately!
