Puff-pastry salmon fillets

20 minutes to prepare •  30 minutes to cook •  Serves 4

Salmon in puff pastry is a delicious way to cook salmon. Halfway between a savory pie and a strudel, this dish is really tasty!

A long ago, I had the chance to share a similar recipe on the blog, my smoked salmon and ricotta cheese pastries. It is a recipe that I have been making since my early cooking days, and has been a family favorite ever since. 
Today I decided to prepare something different from the previous savory strudels and make a simple one with very few ingredients, in order to enhance the flavor of the salmon. I hope you enjoy it!



Here's what you will need for the 4-serving recipe:



250 g pack of puff pastry
4 salmon fillets, about 200 g each
EVO oil
salt and pepper
dry thyme
1 egg yolk


  1. In a small bowl mix 2 tablespoons of EVO oil, salt, fresh ground pepper, dry thyme, a teaspoon of mustard. Distribute the marinade over the salmon fillets with a brush, and let them rest for 20 minutes
  2. Preheat oven to 180°C
  3. Remove the excess of marinade with some kitchen paper. Keep aside
  4. Cut out puff pastry big rectangles and place them on a baking paper covered baking sheet
  5. Place 1 salmon fillet at the center. Wrap the puff pastry rectangle around
  6. Using two fingers, lightly press the ends of the pastries, to close it well. Then brush the tops with a bit of whisked egg yolk
  7. Place pastries on the lowest oven shelf and bake at 180°C (fan oven) for 30 minutes, until they’ve risen and the tops are golden brown. Leave to cool for a couple of minutes, and serve while still warm!
