Picnic sandwich with Stracciatella cheese, smoked salmon burger, peas' puree and rocket salad

If you find yourself with salmon burgers, but don’t want to be bored by eating them alone, then you need to roll your sleeves up and make these incredible salmon patties.

Salmon is a great way to enjoy a lean, higher protein meal with high-quality fats (we love those Omega 3’s). While I am all about these added health benefits, I also love a meal that tastes phenomenal too. These salmon burgers check all the boxes and then some!
Below I will break down this simple recipe to enjoy your salmon properly. Let’s dive in!



Here's what you will need for the 4-serving recipe:



4 buns
4 salmon burgers (90 g each)
100 g rocket salad
100 g Stracciatella cheese
100 g frozen peas
salt and pepper

    1. Heat a pan, and grill salmon burgers for 5 minutes. Keep warm
    2. Boil frozen peas in salted hot water for 2 minutes. Drain and blend until you obtain a smooth puree
    3. Wash and chop the rocket salad, then keep aside
    4. Cut buns in half and spread the peas' puree on the bottom half
    5. Put smoked salmon burger, stracciatella cheese and some rocket salad on top. Serve covered with the top half of the bun
