Mustard and honey glazed salmon fillet with chopped almonds

Quick to make and tasty, this easy fish-based second course dish has more verve than most.

The honey and mustard glaze is sweet and sour, while orange add a bitter note that goes nicely with the mild salmon.

If you want a lighter version, cod or flounder make fine substitutes, though you may have to adjust the roasting time. Enjoy!

 


Here are ingredients for the 4-serving recipe:



4 (200 g each) salmon fillets
2 tablespoons honey
1 tablespoon orange juice
2 tablespoons mustard
1 fistful almonds 
salt and pepper

  1. Tear off 4 sheets of parchment paper about 10 cm longer than salmon fillets
  2. Prepare the marinade: mix in a bowl mustard and honey, orange juice with salt and pepper
  3. Place the salmon in the center of the paper and cover it with the marinade, including the skin side. Fold up the edges and ends of the foil around the fish. Shape it so the foil will hold liquid without allowing it to run out and close it well. Then, place it in the fridge for at least one hour
  4. When the time has passed, heat the oven at 200°C
  5. Open the parchment paper around the salmon fillets and place some chopped almonds on top. Then, close them again and bake for 15 minutes at 200°C
  6. Finally, take the salmon fillets out of the oven, and set it in grill mode. Open the parchment paper and cover the top surface of the fillets with some of the marinade inside the paper. Then, grill for 3 minutes 
  7. Remove the fillets from the parchment paper and arrange them on a serving dish
