Picnic sandwich with roasted pumpkin cream, smoked tuna and Stracciatella cheese

This is pretty much the best sandwich with Stracciatella cheese I’ve ever made!

Need I say more?
I am just so happy that my grocery store is always filled up with fresh pumpkin. I’m a huge fan of fresh pumpkin and today it really does the trick.
That mildly sweet flavor and thick stringy flesh makes this a very filling sandwich and the sliced smoked tuna adds an extra layer of savoury.

What a great way to begin the Summer season!

Here's what you will need for the 4-serving recipe:

4 buns
600 g roasted pumpkin (see here how to prepare it)
100 g smoked tuna
1 sprig rosemary
100 g Stracciatella cheese
EVO oil
salt and pepper

  1. Prepare the cream of roasted pumpkin: place the roasted pumpkin in a blender with 4 tablespoons of EVO oil, salt, pepper and the rosemary leaves. Blend until the mixture is smooth
  2. Cut buns in half and spread 1 tablespoon of pumpkin cream on the bottom half
  3. Place few slides of smoked tuna on top
  4. Spread some Stracciatella cheese. Then, sprinkle few drops of EVO oil on top
  5. Serve covered with the top half of the bun
