This Cottage Pie is so hearty and satisfying. The combination of ground beef and vegetables in gravy, tucked into creamy mashed potatoes and baked until golden will make everyone at your dining table happy! It's so filling and pretty healthy too.
Cottage Pie is an inexpensive British meat pie that is made with cooked minced meat topped with mashed potato.
This recipe is the perfect addition to any weeknight, holiday dinner, or special occasion, like St. Patrick's Day. It can be made ahead of time and is freezable.
Here's what you will need for the 4-serving recipe:
Beef layer:
1kg Ground Beef
500ml beef stock
1 small glass dry wine
1 large white onion, finely diced
150 g mushrooms, finely diced
2 carrots, peeled and finely diced
1 tablespoon dried Thyme
1 tablespoon dried rosemary
bay leaf
1 tablespoon tomato puree
salt and black pepper

Mashed potato layer:
2kg white Potatoes, peeled and diced into chunks
100 g butter
1/2 tablespoon ground nutmeg
2 large handfuls Cheddar cheese, grated
salt and pepper
125 ml cow milk
- In a suitably sized pan, fry your onions, garlic, carrot and mushrooms in a drizzle of olive oil over medium heat until they begin to soften and brown
- Add your beef, break it up with your wooden spoon and continue to frying until brown all the way through
- Pour in your wine and leave to simmer for a few minutes to burn off the alcohol and allow the beef to soak up the flavor. After, stir in your beef stock, tomato puree, thyme, rosemary, bay leaf, salt and pepper (to taste) and leave to simmer over low heat for a good 30-45 minutes, stirring occasionally
- At this point it will look like you've got way too much liquid but it will naturally thicken, so fear not
- Whilst your beef is simmering, get started on the mash. Whack your peeled potatoes in a pot of salted boiling water for around 15mins or until soft enough to comfortably slice. Drain (don't rinse) and place back in the pot
- Mash with butter, half your cheese, nutmeg and generous helpings of salt and pepper until a smooth texture. Add milk until desired texture
- Leave to one side and preheat oven to 200°C. In a baking dish, firstly pour in your beef (removing bay leaf), top the beef with your mash and finish with a layer of cheese
- Place in the oven for around 30 minutes or until golden and crispy on top. Leave to sit for a few minutes to retain shape and then serve!
