Either you like bacon or you are wrong
Beef rolls are a perfect dish if you want to spend little time in the kitchen and still have a delicious second course.
Rolls are suitable to be filled with a multitude of ingredients, in this case the meat, sliced thin, encloses a stuffing with smoky flavor.
Choose the best bacon, possibly eliminating the excess of spices. Its taste is here enhanced by crunchy pistachios.
For a lighter version, make the filling with ricotta cheese and grilled eggplant, cut into thin strips.
Or serve the rolls with baked potatoes for a complete meal. Enjoy!
Here's what you will need for the 4-serving recipe:
500 g beef meat cut into thin slices
1 sprig parsley
50 g bacon
40 g soft inside of bread
80 g grated Parmesan cheese
40 g shelled pistachios
50 ml white wine
EVO oil
salt and pepper
- Dunk the soft inside of bread in a small bowl of water and wring it put. Place it in a blender together with the leaves of parsley, pistachios, Parmesan cheese, 2 tablespoons of EVO oil and a pinch of salt. Blend until the mixture is smooth
- Lay the beef slices on a cutting board and sprinkle them uniformly with the mixture. Then, roll them up over the filling, starting with a short side; secure with toothpicks
- In a pan pour 1 tablespoon of EVO oil, add the beef rolls and braise the beef rolls for 2 minutes. Then, pour the white wine over them, cover the pan with a lid and cook for about 10 minutes, taking care they brown on all sides
- Discard toothpicks from the beef rolls, cut them in half and serve them warm
