It is time to be healthy again.
After few months of forgiving ourselves for all our gluttony sins (apparently justified by after-summer low morale), time has come to stop and get back on track.
You are then so lucky to have me, providing you with healthy recipes prepared from nourishing, nutrient-dense animal foods...as well as tasty fish!
Today we will try a very rich and special preparation: trout fillets with bacon (just a little, I swear), sour onions and oranges. This recipe involves the delicate flesh of trout together with crispy bacon and rosemary. The side dish consists of sour caramelized onions and orange zest.

Here's what you will need for the 4-serving recipe:
4 trout fillets
2 onions
80 g bacon
3 tablespoons sugar
3 tablespoons white wine vinegar
1 orange zest
1 sprig rosemary
EVO oil
salt and pepper
- To prepare trout fillets with bacon and sour caramelised onions and orange zest, start by cutting onions into slices not too thin. Place them in a pan with 3 tablespoons of EVO oil and let them braise until golden
- Add sugar and, as soon as you see onions caramelizing, pour the vinegar, too. Season with salt and freshly ground pepper and let them to cook over medium heat
- Meanwhile, cut the orange zest into strips, being sure - as far as possible - not to include the white part. Boil them a few minutes in a pan with a little water, then drain and add them to the pan with onions. Let onions and orange zest to cook for 5 minutes more
- Take the trout fillets and braise them in a pan with 2 tablespoons of EVO oil and a sprig of rosemary. Take care not to overcook it
- In another pan, fry the bacon cut into cubes, until it becomes crispy, then add it to the trout fillets
- When everything is ready, place one trout fillet and some bacon cubes on each serving plate. As side dish sour caramelized onions and orange zest
