Zucchini flowers baked omelette

Baked omelette is an easy and light recipe, good for a quick dinner but suitable for more demanding occasions, too. 
The preparation in the oven allows the employment of baking paper to avoid additional animal or vegetable fats; it also prevents the smell of frying - definitely not pleasant - to spread all over the house. Furthermore, overall ready time for this dish is at most 20 minutes, including both preparing the ingredients and cooking.

This omelet is perfect to be eaten cold in summer (maybe as filling for picnic sandwiches), and enjoyable during the rest of the year as well, especially if stuffed with seasonal vegetables. In this version we choose to make this baked omelette special by adding tasteful zucchini flowers.


Here are ingredients for the 4-serving recipe:

 

6 eggs
20 zucchini flowers
1 shallot 
2 tablespoons grated Parmesan cheese
EVO oil
salt and pepper


  1. Preheat oven to 200°C
  2. Braise chopped shallot with 1 tablespoon of EVO oil and a pinch of salt;  wash and clean zucchini flowers and add them, too
  3. Take a baking pan and cover it with baking paper previously soaked and squeezed
  4. Beat the eggs, preferably with a whisk, until stiff. Add salt, freshly ground pepper, and the grated Parmesan. Mix well
  5. Pour the egg mixture into the pan and cook the omelette in the oven, for about 10 minutes, until it is golden brown colored and you do not see any liquid
  6. Remove it from the oven and let it cool. Cut into slices and serve warm
