Pasta with asparagus and sausage is an easy, quick and very appetizing first course. A recipe that focuses on a decidedly appetizing combination of flavours: sausage and asparagus are browned separately in a pan and then combined in a sauce blended with plenty of grated seasoned pecorino.
A perfect dish for a family lunch or for a dinner with friends, even if organized without too much notice.
First courses with asparagus are always a great idea! Among those with fresh pasta we highlight both the classic risotto with bacon and asparagus, excellent because they are very simple, and the vegetarian savoury crepes with asparagus, a little more challenging but unforgettable.
Here's what you will need for the 4-serving recipe:
400 g pasta
300 g asparagus
100 g bacon, cut into stripes or cubes
50 g grated Pecorino cheese
EVO oil
salt and pepper
- Rinse the asparagus under cool water to remove any grit. Snap off the bottom inch using your fingers; the stems will naturally break where the tough woody part ends and the tender stem begins
- Peel asparagus' tough outer skin
- Pour 1 l of water in a large pot and bring to boil. As soon as the water boils, dip asparagus in the pot, and go on with the cooking for about 5 minutes
- Drain asparagus' and place them on a cutting board. Separate the stems from the tips, then cut the stems into small pieces
- Cut the skin of the sausage with the tip of a sharp knife and remove it. Cut the sausage into nibbles of equal size
- Heat a big pan, then add the sausage and let it become golden. Then, keep aside
- In the same pan, pour 1 tablespoon of EVO oil and add the clove of garlic. Braise until golden, then add the asparagus
- Cover with a lid and go on with the cooking until soft. Then, add the sausage
- Boil water in a pot, add salt and once started to bubble, pour pasta. Make them cook for about 10 minutes (please refer to the cooking time specified on the package)
- Drain the pasta and transfer it immediately to a pan with the asparagus and sausage. Add the grated Pecorino cheese. Then, turn off the heat
- Top with abundant freshly ground pepper...Buon appetito!
