Fennel salad with smoked salmon, orange fruit, pesto sauce and caviar

15 minutes to prepare Serves 4

Champagne wishes and caviar dreams II

If you happen to have some smoked salmon and caviar left from Christmas celebrations, this recipe salad is perfect for you.

Caviar is considered a delicacy and is eaten as a garnish. Usually high-quality caviar is appreciated in purity, given the value. Lower-quality caviar can possibly be combined, in cold or slightly warm preparations, with light flavors. Otherwise, it may be served with fresh-taste vegetables to enrich some salad with its captivating consistency and color.

Which is is exactly what we will do today!

Here's what you will need for the 4-serving recipe

200 g smoked salmon
200 g fennel, finely chopped
1 orange
caviar
basil leaves
EVO oil
salt

    1. Cut smoked salmon into slices
    2. Peal the orange, being careful to remove all the white peel, and cut it into pieces; wash fennel, and chop it finely
    3. In a blender, add basil leaves and 2 tablespoons of oil, to create a smooth basil sauce
    4. Arrange your salad: put fennel and orange slices in a large bowl, add  salmon and 3 tablespoons of caviar. Flavor everything with 2 tablespoons of basil-flavored oil, and a pinch of salt. Keep refrigerated until ready to serve
