This simple, classy, cold swordfish salad is the perfect way to enjoy the summer heat, with some fruity twist. You can also use swordfish tartare for this salad, if you trust your fish seller.
This recipe is perfect for picnics or dining in the garden during these days of summer. The rich flavour of grilled swordfish matches perfectly with the fresh and light taste of tomatoes, mint, and orange, and the result is a meal easy to prepare but healthy and very tasty.
Here's what you will need for the 4-serving recipe:
200 g fresh swordfish cut into pieces
100 g melon fruit
100 g cherry tomatoes
1 big red pepper
1 orange fruit
EVO oil
mint leaves
curry powder
salt and pepper
- Prepare a marinade with 1 tablespoon of EVO oil, orange juice, chopped mint leaves, curry, salt and pepper. Marinate swordfish for 1 hour
- Wash tomatoes and pepper. Cut the pepper into thin slices, and tomatoes by half. Also, clean and dice melon fruit. Then, place all the vegetables and fruit in a bowl
- Heat a pan. Drain thw swordfish from the marinade and grill it for a couple of minutes
- In a small bowl pour 2 tablespoons of EVO oil, salt and pepper. Mix it and keep aside
- Assemble your salad by placing few slices of Carasau bread on the bottom, vegetables and swordfish on top
- Season the salad with the emulsion of EVO oil, and mint leaves, and bring it to the table!
