Banana bread muffins

I’m sharing a new dessert recipe today!
Twice in a row, I know. Try to contain your excitement, ah ah.

I may not be much of a international chef and you may already have a great banana bread recipe, but I’m sharing this recipe anyway because, well I am just so proud of myself for not letting some innocent bananas go wasted.
I have finally found a way to solve the problem coming from Nina's hate-love relationship with banana fruits: she loves or hates them every other week, and there's no way to forecast what comes next.

This is a traditional recipe with a twist given by mixed nuts and chocolate chips, and it is simple and they are delicious.
I tried making loaves of bread multiple times in the past and couldn’t ever get the inside cooked right without burning the outside. So I finally said – forget that, I’m making muffins.
I love the muffins because aside from the fact that they are easier to cook, they are also easier to eat. Just grab and go! Perfect for a quick breakfast or to pack in school lunches. Enjoy!


Here are ingredients for a 18-muffins recipe:



130 g brown sugar
240 g flour 00
3 big ripe banana fruits
2 eggs
10 g vanilla baking powder
1 teaspoon baking soda
100 g butter
100 g mixed dried nuts (nuts, peanuts, walnuts)
50 g chopped dark chocolate

  1. Preheat oven to 180°
  2. Smash the bananas with a fork until you obtain a puree
  3. Whisk the butter and the sugar with an electric beater until you get a light and fluffy mixture
  4. Add the eggs and whisk again
  5. Add bananas' puree and whisk again
  6. Sift the flour, the baking powder and baking soda. Add them to the mixture while keeping on mixing
  7. Divide the batter in your muffin pan and fill each 1-cm to the top. You can make this recipe as 12 large muffins. Top with a sprinkle of chopped chocolate and mixed nuts
  8. Bake it at 180° for 30 minute. (Do not open the oven for at least the first half of the baking time and perform the toothpick test at the end, to be sure baking is done) 
  9. Leave the muffins to cool a bit in the oven with the door open, then out of the oven
