Lemon chicken with honey and rosemary

Is your fridge ready?

Among the rest of the pre-vacation stress — leaving work projects in a good place, finding a nice bathing suit, and trying to whip myself into bathing suit shape — I have been trying to perfectly plan our refrigerator contents so that they are at zero (excluding condiments) at the exact moment we leave for the airport. It is so much harder than you might expect!
First of all, this process has to start at least a week before departure, which is hopefully the last time you do a real shop. Then, I follow this procedure: plan meals, make sure I am not doubling up on anything I already had at home, and cook simple, basic recipe out of few, fresh ingredients during the week.

One of my favorite ingredients to use is chicken. It is a low-calorie, versatile meat...and super easy to cook healthy dishes with.
Today we will employ it in a tasty second course dish: chicken bites, braised and cooked with wine, flavored with a delicate honey, lemon & rosemary sauce.
Moreover, this recipe is super easy to make, which makes it perfect for summer meals.

Here's what you will need for the 4-serving recipe:



500 g chicken breast
100 ml white wine
100 g flour 00
1 organic lemon, both zest and juice
1 teaspoon honey
1 shallot
anice seeds
dry rosemary leaves
ginger powder
EVO oil
salt and pepper


  1. Cut the chicken breast into cubes - not too small - 
  2. In a bowl, mix flour 00 with 1 teaspoon of salt. Mix well with a fork. Put the chicken pieces inside the bowl and stir to cover them with the flour
  3. In a large pan pour 4 tablespoon of EVO oil. When it is hot, add the chopped shallot and braise until golden. Then, add the chicken and cook it over high heat - stirring constantly - for 5 minutes (or until crispy)
  4. Pour the white wine and go on with the cooking until the wine evaporates 
  5. Add the lemon juice and zest, honey and spices, according to your taste. Go on with the cooking for a couple of minutes more. Finally, top with freshly ground pepper and serve immediately!
