A ciccio de sellero

Do you know those cozy trattorias where you feel like home and you always taste genuine flavors?

Today we want to suggest this atmosphere, by enjoying a pasta dish with bacon, fava and green peas. A first dish in which pasta is combined with the bright color of the beans - protagonists of current spring season - along with the crispy touch of bacon, and finally seasoned with Pecorino romano cheese.

Cover the table with a checkered tablecloth, fill the glasses with good red wine and surprise your guests with this simple and sincere pasta dish!

Here's what you will need for the 4-serving recipe:

400 g pasta
200 g frozen fava beans
200 g frozen green peas
150 g bacon cut into cubes
1 onion
1 l vegetable broth
50 g Pecorino cheese
salt and pepper
EVO oil

  1. Pour 500 ml of water in a large pot and bring to boil. As soon as the water boils, add salt and  the frozen fava and green beans. Let them cook for about 5 minutes
  2. Remove the beans from the heat and drop them into an ice-water bath for an immediate cool down. Drain the cooled beans and remove the tough outer skins with a knife
  3. Chop the onion. Then, pour 2 tablespoons of EVO oil in a pan and, when it is hot, braise it for a couple of minutes
  4. Add the bacon and let it braise until it becomes golden
  5. Add the beans, a pinch of salt, freshly ground pepper and pour one ladle of vegetable broth. Let it cook for 15 minutes, adding more broth whether necessary
  6. Boil water in a pot, add salt and once started to bubble, pour pasta. Make them cook for about 10 minutes (please refer to the cooking time specified on the package)
  7. Drain pasta al dente and stir it for a few moments with the beans and bacon sauce. Serve hot with some Pecorino cheese on top
