When you find a dish that’s not only easy to make but also provides the delightful gift of built-in healthiness, you hang onto it with all you’ve got.
For me, that meal is a delicate, roasted cauliflower pasta with a delicious, creamy sauce of Gorgonzola cheese. Once you boil the cauliflower and melt the cheese with a little spoon of butter, it’s time to claim your reward: the blissful, smell of roasting cauliflower...yummylicious!
In about 15 minutes, you’ll be digging into a comforting meal that should theoretically make 4 servings, but often ends up as two servings in my house. Ha-ha, enjoy it!
Here's what you will need for the 4-serving recipe:
280 g Pappardelle pasta
200 g cauliflower
1 clove garlic
20 g butter
150 g Gorgonzola cheese
EVO oil
salt and pepper
- To prepare this pasta with cauliflower, start by cleaning the cauliflower: remove damaged leaves and the external stems which are hard and fibrous. Keep aside the inner stems and free all the cauliflower florets from the core, one by one
- Pour 1 l of water in a large pot and bring to boil. As soon as the water boils, dip cauliflower in the pot, and go on with the cooking for about 10 minutes
- Meanwhile, melt the butter and add the Gorgonzola cheese, cut into pieces. Stir to mix until you obtain a smooth sauce, being careful not to make it boil
- Drain the cauliflower and keep the boiling water aside
- Braise the garlic with 2 tablespoons of EVO oil until it becomes golden, then add the cauliflower. Roast them for 5 minutes to make them tasty and crispy
- Boil the cauliflower water in a pot (adding some more water if needed). Pour Pappardelle fresh pasta and let it cook for 2 minutes - please refer to the time instructions reported on the package -
- Drain Pappardelle and pour them in the pan with cauliflower. Sprinkle with freshly ground pepper and stir until fresh pasta is well mixed with the cauliflower
- Pour the Gorgonzola cheese sauce over and serve immediately!
