Pasta with red chicory, bacon and cream

Pasta with red chicory, bacon and cream is a tasty first course, the optimal choice for a lunch with friends or relatives, or on Sunday.

It is an easy, fast recipe but unfortunately not really suitable for people on diet due to its pretty high nutritional value.


Here's what you will need for the 4-serving recipe:
 


320 g Penne pasta 
400 g red chicory
50 g grated Parmesan cheese
100 g bacon
200 ml cooking cream
salt and pepper


  1. Rinse red chicory under cold water and cut it into strips
  2. Cut bacon into cubes
  3. Heat well a non-stick pan and braise bacon with no oil
  4. Add the red chicory, salt and freshly ground pepper (be generous with it). Cover with a lid and cook for 10 minutes
  5. Boil water in a pot, add salt and once started to bubble, pour penne pasta. Follow the time instructions reported on the package: pasta should be al dente
  6. Drain well the pasta and pour it into the pan with the red chicory. Add the cooking cream, the parmesan cheese and stir over high heat for a couple of minutes to flavor penne pasta. Serve hot!
