Lemon mousse with granola flakes and raspberries

With the arrival of Spring, in few weeks, we will start to regret Christmas time food abuse.
We will start to worry again about getting back in shape for the summer and especially for the bikini fitting.
We will start to complain about our fat belly and, maybe, at last, we will renew our gym subscription...after talking about it for months.

As always, I would not suggest following a strict diet. Healthy eating and regular workout will make it for you.
More importantly, you should never give up the joy of being sit at the table, even while being on a diet.
That's when light recipes may help: low-calorie dishes, but very tasty...so that you won't be driven crazy by your sweettooth!

Today we present you a light dessert recipe to be enjoyed at the end of your meal: a delicious cup of lemon mousse with raspberries and crispy granola flakes.
300 kcal, 15 minutes preparation...what would you want more?



Here are ingredients for a 4-serving recipe:



 

50 g sugar
1 egg yolk
150 g raspberries
100 g granola flakes
1/2 lemon juice
100 ml fresh milk cream
2 gelatine sheets
175 g cream cheese


  1. Pour 1/2 cup of water in a medium bowl and dunk the gelatine sheets in it. Let them soften about 5 minutes
  2. Place the egg yolk in a bowl together with the sugar. Beat the mixture until stiff for about 5 minutes
  3. Pour the lemon juice into a saucepan with 2 tablespoons of water and bring to a boil. Then, wring out the gelatine sheets and add it to the juice. Slowly stir until gelatine melts
  4. Pour the fresh cream into your bowl. Use a whisk to whip the cream with wide strokes, which will get more air into the cream and help fluff it up it faster. When the cream starts to thicken, add sugar and continue to whip until soft peaks form
  5. Add cream cheese to the whipped cream, then the mixture of egg and sugar, finally the lemon juice - at warm temperature -. Stir gently with a spoon to mix well and set aside
  6. Assemble lemon mousse cups: place 1 tablespoon of lemon mousse in each glass and level well. Add a layer of granola flakes about half a centimeter thick. Top with another spoon of lemon mousse and level again. Place raspberries on top
  7. Chill until firm, at least 15 minutes, then serve
