Eggs with tomato sauce are a tasty dish perfect for any time of day:
for a nutritious breakfast, for lunch, or for a quick dinner, especially when we have few things in the fridge. And eggs, usually, are present!
To prepare them, simply fry the garlic in a pan with extra virgin olive oil, then add the tomato passata, and finally the eggs to be simmered in the tomato sauce.
Once ready, you can bring them to the table directly in the pan with a few leaves of basil or chopped parsley, and then serve them immediately, accompanied by abundant toasted bread.

Here are ingredients for a 3-serving recipe :
3 eggs
300 g tomato passata
1 clove garlic
10 basil leaves
1 teaspoon sugar

- Pour 2 tablespoons of EVO oil in a pan with 1 clove of garlic; when the clove has colored a little, add the tomato passata, sugar and salt and cook over low heat for 15 minutes more, until the tomato sauce thickens
- Carefully place the eggs in different bowls
- Then, create 3 "holes" in the tomato sauce by using a spoon
- Place 1 egg on top of each hole, and add a pinch of salt
- Cook for 10 minutes, or until the egg white is not transparent anymore. Add some chopped parsley on top
- Place on each plate 1 egg and some slices of buttered toasted bread, if you like. Enjoy!
