3-tomatoes pizza with Stracciatella cheese

Today's pizza recipe features tomatoes as main character.

I have called it 3 tomatoes pizza because it is seasoned with fresh, halved cherry tomatoes, passata di pomodoro and caramelized tomatoes, as well. Three tomato preparations, with three different and distinguished tastes, will delight your palate!

Creaminess is given by stracciatella cheese, which is distributed on top when the cooking is complete. Enjoy!


Here are ingredients for a 4-serving recipe (4 pizzas):



1 kg pizza dough divided into 4 balls (you may find here my pizza dough recipe and here my recipe for sourdough pizza)
200 g Stracciatella cheese
200 g tomato passata as prepared here
20 cherry tomatoes
EVO oil
sugar
salt and pepper


  1. When you are ready to bake the pizzas, take the dough out of the fridge, leaving at least 1 hour and half for it to warm up and get pliable
  2. In a bowl mix 2 tablespoons of EVO oil, with the tomato passata
  3. Preheat oven to 270°C (or, better, as far as oven temperatures go)
  4. Wash and halve 10 cherry tomatoes. Squeeze them, and keep them aside
  5. Prepare the caramelized tomatoes: heat a non-stick pan over high heat for a few minutes. Cut tomatoes by half and distribute them - with the cut side down - over the pan. Drizzle 1 tablespoons of EVO oil, add a pinch of salt, freshly ground pepper and 1 teaspoon of sugar
  6. Cook over medium heat until the sugar begins to caramelize. Press the tomatoes with the back of a spoon and cook until the juice released by tomatoes evaporates, then let them cool down
  7. Generously dust the counter with semolina flour. Make the pizzas one at a time. Dip your hands in flour and lift a ball of dough. Very gently lay the dough across your fists and carefully stretch it by bouncing the dough in a circular motion on your hands, carefully giving it a little stretch with each bounce. Once the dough has expanded outward, move to a full toss. When the dough is stretched out to your satisfaction (about 25 cm in diameter), lay it on the baking tray covered by baking paper
  8. Place some tomato passata and fresh cherry tomatoes over each pizza
  9. Bake the pizza for about 10 minutes. If the top gets done before the bottom, you will need to move the baking tray to a lower self before the next round
  10. Remove the pizza from the oven and transfer it to a wooden cutting board. Place some caramelized tomatoes on top, together with stracciatella cheese. Serve and enjoy!
