Potatoes and artichokes croquettes

Croquettes are by far my favorite dish based on leftover food.
Every time I get too many boiled potatoes, or when potatoes are becoming too old, I exploit the situation by cooking croquettes.
I wish I could eat a ton of croquettes. Shhh...I shouldn’t be too proud of my big appetite for fried food.

Everybody loves potato, especially kids.
My mom makes croquettes without recipes so this is my original recipe that I have developed, learning from both my mom’s method and adjusting the taste and texture to my preference. Regular croquettes do not include artichokes. I like to add them to give some colors and extra taste.

I know croquettes take quite a long time to make, but if you like them, this homemade recipe won’t disappoint you at all.


Here are ingredients for a 4-serving recipe (12 croquettes):

 


700 g potatoes
2 raw artichoke hearts
2 eggs
1 sprig parsley
1 clove garlic
50 g  flour 00
50 g breadcrumbs
50 g grated Parmesan cheese
1 l seed oil
EVO oil
salt


  1. Wash artichoke hearts and peel potatoes. Cut both artichokes and potatoes into small pieces
  2. Pour 2 tablespoons on EVO oil in a large pan. Braise the garlic clove until golden, then add artichokes and potatoes
  3. After a couple of minutes, remove garlic and pour a glass of water in. Cover the pan with a lid and cook for about 10 minutes, until both potatoes and artichokes have become soft
  4. As soon as potatoes and artichokes are cool enough to handle, run them through a food mill into a large bowl, as if you were making mashed potatoes. Add chopped parsley, a pinch of salt. Mix well with a spoon
  5. Add the flour, grated cheese, one egg and mix again
  6. Heat the seed oil in a heavy saucepan to 180°C
  7. Prepare croquettes: shape mashed potatoes into balls using an ice cream scoop. Dip in the beaten egg, then roll through breadcrumbs
  8. Deep fry 3 or 4 croquettes at a time until crisp and golden brown (about 3 minutes). Then, use a slotted spoon to remove from the oil, and place on a tray covered in paper towels...serve super hot!
