The Yangzhou fried rice is one of the best-known Chinese recipe over the world.
It is a dish consisting of stir-fried rice, eggs, hams, peas, and other vegetables.
The Italian name of this dish is Cantonese rice, which is weird, because this dish is not from Canton (Guangdong) province. In fact it is called Yangzhou fried rice in Chinese, from the name of the city which originated this dish. Yangzhou is a city in the province of Jiangsu, an antique center in the east China.
Depending on where you eat this dish, the recipe could be different. However, there are certain basic ingredients that are un-replaceable in order to differentiate it from other fried rice: cooked rice, egg, ham, shrimps, vegetables such as carrots, peas, corn.
When you make it from scratch, you can choose elements according to your taste, or adjust the portion of each ingredient. It is actually the beauty and fun part in making fried rice.
Here's what you will need for the 4-serving recipe:
360 g sushi rice, cooked as described here
2 eggs
100 g ham, cubed
100 g peas, frozen
rice vine
EVO oil
soy sauce
salt
- Boil peas in salted boiling water for 5 minutes and drain it. Keep aside
- Whisk the eggs in a small bowl
- Pour 2 tablespoons of rice vine, 1 tablespoon of soy sauce in the boiled rice and mix well with a spoon
- Heat a pan with 1 tablespoon of EVO oil. When it is hot, add the rice, the ham, the peas and fry for a few minutes, The, add the eggs and cook until they look like scrambled eggs. Serve hot!
