This Vienna apple cake makes a moist, dense cake that is a favorite of mine.
It is a lovely tart to taste for breakfast or snack. It's not too sweet, but sweet enough to please most palates.
You can have it with coffee and clotted cream but it's delicious also when served with a dusting of confectioners' sugar.

For the pastry
240 g flour 00
100 g sugar
100 g butter
1 egg
1/2 sachet vanilla baking powder
1 lemon zest
salt
For the stuffing
1 apple
70 g raisins
70 g walnuts
50 g sugar
1 lemon juice
1 egg yolk
30 g butter
3 sponge finger biscuits
- Start preparing the pastry: cut the butter into cubes and place it in a bowl. Add flour and vanilla baking powder, both sifted. Add sugar, too, and knead it quickly
- Stir in the egg, then add a pinch of salt
- Form a ball, wrap it with plastic wrap and let it rest in the refrigerator for at least 1 hour
- Peel the apple and cut it into 1-cm cubes. Place them in a bowl and add the lemon juice, Stir to mix and keep aside
- Chop walnuts and biscuits and keep them aside
- When we are close to the the 1-hour resting time of the pastry, preheat oven to 180°C
- Place raisins in a bowl and pour over boiling water. Let sit for 5-10 minutes, then drain
- Melt the butter and keep aside
- Grease and flour the baking pan, then cover bottom and sides with the pastry cut into a flattened disc-shape, about 5 mm thick
- Take the bowl with the cubes of apple and add melted butter, sugar, biscuits, walnuts and raisins. Stir to mix
- Pour the mix in the tray and level it
- Take the remaining pastry and layer it on top of the filling. Create small holes on the surface with a fork
- Beat the egg yolk and brush it on the cake surface
- Bake at 180°C for about 45 minutes
- Once cooked, pull out the tart from the oven and let it cool. When cold, garnish with some powdered sugar and enjoy
