Surprise surprise!
Minced meat cupcakes are fake savory cupcakes. Although aesthetically they recall the famous sweets, they are actually a second course, complete with a side dish of mashed potatoes.
First, a mixture like meatballs is prepared and muffins are created in the muffin pan, and baked. At the end of cooking, decorate these meatball muffins with mashed potatoes as if they were cupcakes and voilà, you are done!
Here are ingredients for a 4-serving recipe (12 cupcakes):
500 g ground beef meat
3 slices white bread
1 glass + 200 ml milk
2 eggs
100 g grated Parmesan cheese
300 g potatoes10 g butter
nutmeg
salt
- Soak the white bread in the glass of milk, after removing the crust, for about 2 minutes
- Season the ground meat with grated Parmesan cheese, milk-soaked bread, Parmesan cheese and eggs. Stir to mix well
- Beat the eggs in a small bowl
- Prepare cupcakes: divide the mixture in your muffin pan and fill each 1-cm to the top. You can make this recipe as 12 large cupcakes
- Preheat oven to 180°C
- Cook the meat cupcakes in the oven for 20 minutes at 180°C
- Meanwhile, pour 1 l of water in a large pot and bring to boil. Wash and brush well the potatoes. As soon as the water boils, dip unpeeled potatoes in the pot, and go on with the cooking for about 15 minutes
- Drain potatoes and, as soon as they are cool enough to handle, peel them and run them through a food mill into a large bowl, as if you were making mashed potatoes
- Add the butter, 200 ml of milk, a pinch of salt and 1 teaspoon of nutmeg powder. Mix well with a spoon
- Remove cupcakes from the oven and decorate with the purée using a sac-à-poche, as if they were real cupcakes. The meat cupcakes are ready, serve them hot or warm
