Give peas a chance
A colorful and beautiful dish, based on a dense and bright green peas' soup and spicy flavor of shrimps marinated with curry, basil, pepper and EVO oil.
This is a simple recipe to follow and prepare in a few steps which offers a tasty appetizer to your menu, and it is also ideal for a great occasion.
In addition to the one-hour marinade, it takes 15 minutes to prepare it, and half an hour of cooking in a pan to make this fragrant soup. A dish with guaranteed success!
Here are ingredients for a 4-serving recipe:
500 g frozen peas
2 shallots
200 g shrimps
100 ml brandy
1 teaspoon curry
10 basil leaves
EVO oil
salt and pepper
- Prepare a marinade with EVO oil, chopped basil leaves, curry, salt and pepper. Clean the shrimps and let them marinate for 1 hour
- Chop the shallots. Then, pour two tablespoons of EVO oil in a pan and, when it is hot, braise them
- Add peas. Go on with the cooking for 20 minutes
- When the 20-minutes time has passed, check that the peas are cooked. If so, add a pinch of salt, and blend everything until you obtain a creamy soup. Keep warm
- Heat a pan and, when it is hot, braise shrimps on it. It will take a couple of minutes for each side. Pour the brandy liquor and let it evaporate
- Serve the peas soup with braised shrimps dipped into it. Add 1 tablespoon of EVO oil and freshly ground pepper on top
