Twist on potatoes
I love potatoes in any shape, form, or fashion, but having them stretched out, revealing a seemingly intricate pattern, makes them even more enjoyable!
Accordion potatoes are perfect if you want to elevate your normal potato side dish! With such an eye-catching shape, they are perfect for an impressive dish to wow your guest! And get this, they are very easy to make!
It took me a couple of tries to get into the groove of slicing the potatoes without destrying them, but once I did, I was able to make the perfect accordion shape each time! So here is the recipe walk-through so you can make them perfectly! I promise you, it’s much easier to make than it looks!
Here are ingredients for a 4-serving recipe:
EVO oil
salt and pepper
- Heat the oven to 180°C
- Wash and peel potatoes, then place them in a cold bath of water and ice for 30 minutes
- Cut them into slices, approximately 5mm thin
- Cut parallel slits into each slice, stopping just before you cut through so that the slices stay connected at the bottom of the potato. Space the slices about 2 mm apart. (Tip: I rest each potato on 2 toothpicks and use that as a guide for when to stop slicing). Then, turn the slice and repeat on the other side
- Pour 3 tablespoons of EVO oil in a pan, add salt and pepper and stir to mix. Brush this mixture on all the potato slices
- If you want, you can place a toothpick inside each slice and use it to curl it
- Bake at 180° for 30 minutes. Let it cool down 5 minutes before serving
