Spaghetti with lemon and shrimps

This creamy lemon and shrimps pasta is a bright and flavorful dish that is quick and easy to throw together in just 10 minutes.

Lemon, garlic, and mozzarella cheese are three flavors that blend so well. Pair it with a good bottle of wine, and the crispness of fresh shrimps and you will achieve perfection, in a light meal.

I like to use large shrimp for this recipe, and I leave the tails on. Not only does it add flavor while cooking but the presentation looks beautiful.
My favorite past for the recipe is spaghetti but any long pasta will work just fine.
Finally, if your not a fan of lemon flavor then just add 2 tablespoons, you can always go back and add more if you feel it needs it!



Here's what you will need for the 4-serving recipe



320 g Spaghetti pasta
1 lemon
400 g shrimps
1 clove garlic
200 g mozzarella cheese
EVO oil
salt and pepper

  1. Grate the lemon zest, and squeeze the juice in a bowl. Keep both aside
  2. Clean the shrimps
  3. Drain mozzarella cheese in a colander, then cut it into small cubes
  4. Heat 1 tablespoon of EVO oil in a pan and, when it is hot, add the garlic. When it becomes golden, remove it and add the shrimps. Braise them - it will take a couple of minutes for each side - and finally add the lemon juice. When it evaporates, keep aside away from the heat
  5. Boil spaghetti in salted water until al dente, for about 10 minutes
  6. Finally, toss spaghetti in the pan with EVO oil, shrimps, a pinch of salt and freshly ground pepper. Top it with lemon zest and cubed mozzarella cheese. Serve immediately!
