Risotto with caprino fresh goat cheese, rosemary and honey

If you thought honey's destiny was just to be drizzled onto toast, think again.

There's over 200 varieties of honey in Italy alone. That leaves us with a lot of choice when it comes to determining our favourite floral notes or honey consistency. As a natural sweetener honey lends itself perfectly to many honey dessert recipes...but not just to that.

You can try using different types of honey in different recipes depending on the required results. For example, with honey and greek yoghurt, you might want to use a superior honey to appreciate the complexity of flavours. Used in baking - like cookies -, honey can add another dimension of crunch or complexity along with a natural sweetness.
In today's recipe, featuring a great risotto with honey and fresh goat cheese, you might choose less trivial flavors, like rosemary-enriched honey or chestnut honey.
Taste it, this risotto is the bee's knees!


Here's what you will need for the 4-serving recipe:
 


320 g Carnaroli rice 
1 shallot
50 g butter
100 g caprino fresh goat cheese
1 l vegetable broth
1 teaspoon honey
1 sprig rosemary
50 ml white wine
EVO oil
salt and pepper


  1. In a pan pour 1 tablespoon of EVO oil, add a finely chopped shallot with a pinch of salt and pan-fry for a couple of minutes
  2. Pour the rice into the pan and let it toast for 1 minute
  3. Simmer it with the white wine until it evaporates
  4. Cook the rice, adding a spoonful of boiling vegetable broth at a time, as for a normal risotto, (please refer to the cooking time indicated on the rice package)
  5. 5 minutes before the rice is done, add the rosemary - chopped - and caprino goat cheese. Stir to mix
  6. Take off the heat and add butter and honey. Mix well, then serve immediately!
