Pizza bianca bites with caramelized cherry tomatoes, shrimps and feta cheese

Summer lends itself to simplicity: fresh fruits and colorful vegetables need very little to get tasty, so that you just need to wash well and serve.
Since everything is so wonderful tasting and aromatic, why complicate things?

One of my favorite summer snacking foods are cherry tomatoes.
Sweet, curvaceous, juicy, bursting, plump, tempting, they are Summer best representatives.
Sure you may delight your guests with some cherry tomatoes seasoned with basil and EVO oil, but here’s a suggestion for something slightly more sophisticated, yet still very simple: caramelized cherry tomatoes.

I learned how to prepare these flavor-packed little morsel a while ago from the talented blogger Un pinguino in cucina but seems as though I've always made it.
For a simple and delicious appetizer, you may serve a bowl of them alongside a wedge of soft cheese and a plate of crackers.
Otherwise, you may combine them with braised shrimps and feta cheese laying them over crunchy pizza bites, as in today's recipe.



Here's what you will need for the 4-serving recipe:


200 g fresh pizza bianca (or toasted sliced bread)
200 g shrimps
50 g feta cheese
10 cherry tomatoes
1 sprig parsley
sugar
lemon juice
salt and pepper
EVO oil


      1. Heat a non-stick pan over high heat for a few minutes
      2. Cut tomatoes by half and distribute them - with the cut side down - over the pan. Drizzle 1 tablespoons of EVO oil, add a pinch of salt, freshly ground pepper and 1 teaspoon of sugar. Cook over medium heat until the sugar begins to caramelize. Press the tomatoes with the back of a spoon and cook until the juice released by tomatoes evaporates
      3. Prepare the shrimps: heat 1 tablespoon of EVO oil over high heat for a few minutes and braise the peeled shrimps in it, stirring gently from time to time 
      4. Remove from heat and add the caramelized tomatoes, 1 teaspoon of lemon juice, and chopped parsley
      5. Toast the pizza bianca bites in the oven and cover it with 1 generous tablespoon of cherry tomatoes and shrimps. Sprinkle with crumbled feta and bring to the table!
