Smoked turkey breast is one of the most versatile, healthy and long-lasting ingredient you may find.
It's high in protein, and add a fantastic smoked flavor to your recipes.
Today's chopped salad is, consequently, a departure from your average leafy green salad, made instead with chunky, crunchy chopped vegetables.
Sweet sugar snap peas and bitter red chicory develop a tasty contrast and are tossed with a mayonnaise, capers, and tuna dressing for a healthy and flavorful side dish.
This easy salad can be made in advance and enjoyed at room temperature for picnics, cookouts or just a healthy brown bag lunch.
Here are ingredients for the 4-serving recipe:
100 g sugar snap peas
200 g red chicory
150 g smoked turkey breast
1 egg
10 capers
20 g mayonnaise
EVO oil
salt and pepper
- Pour 1 l of water in a large pot and bring to boil. Meanwhile, wash sugar peas. As soon as the water boils, dip the egg in the pot, and go on with the cooking for about 10 minutes
- After 5 minutes, add the sugar peas, too
- Prepare the dressing: drain the tuna and chop the capers - after having carefully washed them. In a bowl mix tuna and capers with 2 tablespoons of EVO oil, salt and pepper, mayonnaise and whisk until you obtain a smooth mixture
- Drain peas and eggs. Peel the hard-boiled egg and slice it
- Wash the chicory and cut it into strips. Slice the smoked turkey, too
- Put sugar peas in a bowl with chicory, egg and turkey. Season everything with the mayo dressing and stir to mix. Buon appetito!
