How many times has it happened to you? Winter is coming...and you start to desire some summer fruits!
I happen very often with peaches: as soon as temperature drops, and weather becomes humid and foggy, I want peaches back. But this year I do not find me unprepared because I have made and saved some jars of peaches in syrup in July, to preserve all the aroma of summer fruits during the cold season.
In today's recipe, we will employ them in an intriguing sweet and savoury recipe featuring peaches in syrup, chicken drums and couscous. Due to the lack of time in our daily life, we will use the precooked couscous, as always. The recipe takes inspiration from the one already on Cucchiaio website.

Here are ingredients for the 4-serving recipe:
280 g couscous
4 chicken drums
2 peach fruits in syrup
50 g chopped walnuts
200 ml white wine
200 ml peach fruit juice
1 tablespoon brown sugar
1 sprig thyme
1 sprig rosemary
dry ginger powder
turmeric powder
EVO oil
salt and pepper
- Clean the chicken drums and place them in a saucepan with 1 tablespoon of EVO oil, thyme and rosemary. Braise the chicken for a few minutes, then add the white wine. When the alcohol has evaporated, add three cups of water. Cook for about 35 minutes over low heat
- Place 400 ml of cold water in a medium saucepan. Bring to boil and add a pinch of salt
- Put the couscous in a bowl. Pour the hot water over it. Let the couscous to swell for 10 minutes, covered by a lid. Add 1 teaspoon of each spice (ginger, turmeric, nutmeg) and freshly ground pepper
- Add 2 tablespoons of EVO oil to the couscous. As couscous grains tend to bind together in the cooking process, fluff them with a fork
- When the chicken is cooked, break it into pieces with your hands, then let it cool completely
- Drain and cut peach fruits in syrup into small pieces. Place them in a pan with the peach juice and the brown sugar, let them cook over low heat until the juice has thickened as a syrup
- Combine the couscous with the chicken drums and the pieces of peach fruit. Add the chopped walnuts, too
- Place one ladle of couscous with peaches and chicken at the center of each serving plate. Serve while still warm!
