I love getting outside and enjoying these last days of good season. Trees are colorful, nature becomes generous with new smells, mushrooms and chestnuts are on their way to come! Picnics and warm weather just go together. Whether you cook out in your own patio area or take a picnic to a park, there's no wrong place to post up for a casual déjeuner sur l'herbe. Just gather your friends, grab a big blanket, and let the fun start.
Forget delicate leafy salads and fussy desserts. Today we will eat a deliciously simple sandwich, with smoked salmon, sun-dried tomatoes and a delicate saffron-flavored mayonnaise. Its preparation takes less than 10 minutes and can easily be multiplied to feed a crowd!"
Here's what you will need for the 4-serving recipe:
4 buns
200 g smoked salmon cut into thin slices
200 g chicory
10 sun-dried tomatoes
2 sachets saffron powder
125 g Greek yogurt
50 g mayonnaise
salt and pepper
- Mix Greek yogurt with the saffron powder and mayonnaise until you obtain a smooth cream. Store in the refrigerator
- Wash and chop the chicory, then keep aside
- Cut buns in half and spread the saffron-flavored mayonnaise on both halves
- Put smoked salmon slices, chicory and sun-dried tomatoes on the bottom half. Serve covered with the top half of the bun
