Pasta with saffron, cream and sausage

It has happened to all of us. At least once.

He calls you from the office: "An old friend is in town, I invited him over for dinner!"

Mi casa es tu casa, no problem, you think. Until you realize that today (and of course it is exactly today) you will be busy  in a meeting until half an hour before dinner time. NO time to go the supermarket: you are alone, my little girl.

Fortunately, with your magic wand and some long-life products from your cupboard and from your fridge, you can still do it.

(Please be advised, long-life products are able to change your houselife. Always keep them stored in your cupboard!)


Today we will prepare Pasta with cream and saffron sauce, combined with pan-fried sausage. A delicacy which will delight your beloved guests...and will save your love relationship from last-minute-invitations induced crises. Ready?

Here are ingredients for the 4-serving recipe:

 

350 g pasta
250 g sausage
250 ml liquid cream
60 g grated Parmesan cheese
1 teaspoon saffron
salt and pepper

  1. Cut the skin of the sausage with the tip of a sharp knife and remove it. Cut the sausage into nibbles of equal size
  2. Place the pieces of sausage in a pan preheated over medium heat. Do not add any oil so that it fries in its own fat 
  3. Once it has become golden, add the cream directly into the pan and cook for a few minutes until the cream is well mixed with the sausage fat 
  4. Meanwhile, cook the pasta in boiling salted water
  5. Pick up a ladle of water from the pasta and use it to melt the saffron; then add it to the sauce of cream and sausage in the pan and mix well
  6. Drain pasta al dente (about 2 minutes before the cooking time indicated on the package) keeping aside some cooking water. Add pasta to the sauce and season it with salt and pepper according to your taste
  7. Add grated Parmesan and pan-fry the pasta over medium heat for 2 minutes, pouring some cooking water not to dry too much the sauce. Serve immediately!
