Pasta with canned tuna and cream cheese sauce, and sun-dried tomatoes

Today's dish is so creamy and flavorful you would never guess it is good for you!
Low in fat and high in protein and nutrients, it has all the taste without the guilt. Moreover, it will be ready in 10 minutes: basically you just need to wait for pasta's cooking time.

Tuna is a convenient and affordable source of low fat protein. It’s also high in omega 3’s which are essential for brain and heart health.

The sun-dried tomatoes and cream cheese sauce is very versatile – without the tuna it can even be served over vegetables, replacing unhealthy, creamy dressing and adding plenty of flavor. Enjoy!



Here are ingredients for the 4-serving recipe:


 

320 g rigatoni pasta
100 g cream cheese
15 sun-dried tomatoes preserved in EVO oil
200 g canned tuna
10 basil leaves
EVO oil
salt and pepper


  1. Put a pot of water to boil and salt it
  2. Prepare the sauce of sun-dried tomatoes: pour sun-dried tomatoes in a blender without draining them from the oil in which they are preserved. Add the cream cheese, basil leaves, a pinch of salt and blend until the sauce is smooth
  3. Drain canned tuna and add it to the sun-dried tomatoes sauce. Stir to mix 
  4. Pour rigatoni pasta into the boiling water and cook it al dente
  5. Drain pasta and pour it into the pan with the sun-dried tomatoes and cream cheese sauce. Stir gently
  6. Sprinkle pasta freshly ground pepper. Your rigatoni pasta is ready to be served and enjoyed!
