Lasagne with mortadella ham and pistachios pesto

Lasagne with mortadella ham and pistachios pesto is a delicious first course: creamy and stringy lasagna, simple to prepare and perfect for lunches and important occasions.
These white lasagnas are truly incredibly delicious: rich, succulent, prepared with few ingredients and very easy to make.
Perfect as a holiday dish , the lasagne with pistachios and mortadella are excellent to serve as a first course on Sundays, hosting dinners, anniversaries; delicious freshly baked, nice and warm and stringy and also delicious reheated the next day!


Here's what you will need for the 4-serving recipe:


500 g fresh lasagne sheets
200 g mortadella ham
200 g grated Parmesan cheese

For the pistachios pesto:
200 g unsalted pistachios
50 g grated Parmesan cheese
1 clove garlic
5 basil leaves
EVO oil
 
For the bechamel sauce:
1 l milk
100 g butter
100 g flour 00
nutmeg
salt

  1. Prepare the pistachios pesto blending all the ingredients to create a smooth sauce. Keep aside
  2. Prepare bechamel sauce: melt the butter in a saucepan and add the flour.
  3. Whisk until smooth then slowly pour in the milk, a little at a time. Whisk continuously until the sauce is thick then turn down the heat, add the salt and allow to simmer, stirring, until the sauce is thick and cooked through (this takes around 5 minutes on a gentle heat). Once the sauce is cooked, remove the pot from the heat and stir in the Parmesan cheese
  4. Preheat oven to 180°C fan forced
  5. Cut mortadella ham into pieces
  6. Place one ladle of bechamel sauce on the bottom of a a large baking dish
  7. Lay one layer of lasagne sheets next to each other in the baking dish
  8. Spread some pistachios pesto and some bechamel sauce over the lasagne. Sprinkle over some  Parmesan cheese
  9. Arrange more layers on top until you finish the ingredients
  10. Bake for 30 minutes, 20 minutes sealed with aluminum foil, and the last 10 minutes without it
  11. Let it cool down for 5 minutes and bring it to your gluttonous table!
