Swordfish with honey and cherry tomatoes is a second course that will win you over. It is a peculiar recipe characterized by an unusual and delicious combination: honey, with a sweet and fruity scent that goes perfectly with the acidity of the tomato and the delicate meat of the swordfish.
The slices of swordfish, just seared in a pan, are cooked in the oven with a little oil and then served covered with a diced of flavored tomatoes. A tasty dish, therefore, but healthy and light.
Swordfish steaks, lean and firm, lend themselves particularly well to simple cooking which enhances their characteristics. Here's what you will need for the 4-serving recipe
600 g fresh swordfish cut into 4 thick slices
1 clove garlic
1 bunch cherry tomatoes
2 tablespoons toasted pine nuts
5 teaspoons honey
1 glass wine vinegar
basil leaves
EVO oil
salt and pepper
- Preheat oven to 200°
- Start marinating the fish slices: place them on a plate, add some sliced garlic, a drizzle of oil and leave them to marinate for 10 minutes
- Heat 3 tablespoons of EVO oil in a pan, place the swordfish slices and cook them for about 2 minutes per side or until a crust forms. Transfer them to a baking tray and bake them in the oven at 200° for about 5 minutes, then remove them from the oven and let them rest in the heat for about 10 minutes
- Cut cherry tomatoes into cubes, sprinkle them with a little salt, a pinch of pepper, finely chopped basil
- Prepare the honey sauce: heat the vinegar in a saucepan until it is reduced by a quarter, add the honey and taste to check the flavour, if it is too sour add more honey. Let cool
- Finally, add everything to the tomatoes, mix well, add oil, pine nuts, season with salt and leave to rest
- Arrange the swordfish slices on the serving plate and sprinkle the honey sauce over everything
