When it’s really hot outside, no-one wants piping hot food for lunch!
This simple, classy, cold salmon salad is the perfect way to enjoy the summer heat while sipping on a fabulous glass of chilled sauvignon blanc.
You can also use hot smoked trout (cooled, flaked) for this salad or some braised shrimps.
This recipe is perfect for picnics or dining in the garden during these first days of summer. The rich and buttery flavour of salmon matches perfectly with the fresh and light taste of ricotta, and lemon, and the result is a meal easy to prepare but healthy and very tasty.
Here's what you will need for the 4-serving recipe:
200 g mixed salad leaves
300 g melon fruit
100 g smoked salmon
100 g ricotta cheese
1 lemon fruit
EVO oil
salt and pepper
- Wash salad. Then, place it in a bowl. I used iceberg, leek, radicchio salads
- Peel the melon and cut it into pieces. Add them to the salad
- Slice the salmon and add it, too
- Add few spoons of ricotta cheese
- In a small bowl pour 2 tablespoons of EVO oil, lemon juice, salt and pepper. Mix it and keep aside
- Season the salad with the emulsion of EVO oil and bring to the table!
