Chicken Salad with apple and Pecorino cheese is a delicious twist on traditional chicken salad.
Apples lend their bright, crisp flavor, while cheese bring a little more fat to the healthy base. This recipe is the perfect way to use up leftover rotisserie chicken. Enjoy!
Here are ingredients for the 4-serving recipe:
200 g iceberg salad
200 g fennel
200 g grilled chicken
100 g Granny Smith apple
1 tablespoon mayonnaise
1 tablespoon Greek yogurt
50 g sliced Pecorino cheese
EVO oil
salt
balsamic vinegar
- Wash the iceberg salad under running water. Trim off the bottom, and cut the leaves into 1-inch lengths. Place the salad in a large bowl
- Wash the fennel and cut it into small pieces, Peel and cut the apple as well
- Cut grilled chicken into small pieces, too. Add chicken, apple and fennel to the salad bowl
- Prepare the yogurt sauce: place yogurt in a small bowl. Add a pinch of salt, 1 tablespoon of EVO oil, 1 teaspoon of vinegar and the mayonnaise
- Season the salad with the yogurt dressing, sliced Pecorino cheese and stir to mix. Serve immediately!
