Grilled radicchio red chicory and smoked scamorza cheese with balsamic vinegar cream

Very often they are really the simpler recipes those that satisfy the most.
A tasty one recipe that delight large and the children are the grilled scamorza. It is a dish that can be served both as starter that as a main dish: it takes just a few minutes to prepare it and it is also affordable kitchen experts.

Scamorza is a typical cheese of the central-southern regions of Italy, but its production extends throughout the national territory. It is a pasta filata cheese and has a particular seasoning that gives it a strong flavor.
Depending on your preferences you can opt for the choice of traditional scamorza, which has a more delicate flavor, or smoked one. I prefer the smoked one.
A suggestion for the enrichment of this dish is to accompany it with a suitable side dish. It is advisable to choose between a fresh salad or a mixture of vegetables cooked in a pan.

Today I accompanied it with pan fried red chicory radicchio slices.
Super easy, summer yummy!


Here's what you will need for the 4-serving recipe:
 


500 g radicchio red chicory
2 scamorza cheese
Balsamic vinegar cream
EVO oil
salt and pepper


  1. Clean each radicchio salad, wash them and dry them well. Cut each one lengthwise, being careful to leave the base intact, to obtain 4 halves of it
  2. Cut the two scamorza cheeses to obtain 8 slices
  3. Pour 2 tablespoons of EVO oil in a non-stick frying pan and fry the radicchio for a few minutes, adding a pinch of salt
  4. Grill the scamorza slices in another pan for about 5 minutes on both sides, until they have a golden crust and and they have softened inside
  5. Transfer everything to a serving dish and complete with a few drops of balsamic vinegar cream. Serve immediately!
